To prepare the lauki badi stir fry, start by roasting the bottle gourd in a frying pan until lightly browned. be cautious not to overcook.

Once the gourd is roasted, set it aside to cool.

Heat oil in a pan, and add cumin seeds, mustard seeds, and a pinch of asafoetida.

After about 20 seconds, add green chili, chopped ginger, and minced garlic cloves.

Saute for 1 minute and then add the roasted bottle gourd to the pan. cook until the gourd becomes tender.
