Heat safflower oil in a large nonstick skillet over medium-high heat until hot but not smoking. to test the oil, sprinkle in a few mustard seeds. if they sizzle and pop, the oil is hot enough. quickly add the remaining mustard seeds, cumin seeds, and curry leaves (if using). stir and cook until they become very fragrant, which usually takes about 1 minute. cover the pan as needed to contain any splattering.

Reduce the heat to medium, add the onion, and cook while stirring until it starts to brown, for approximately 5 to 7 minutes. increase the heat to medium-high, add the okra, and cook while stirring often. cook until the "goo" or mucilage from the okra starts to release and the onion further darkens, for about 4 to 6 minutes.

Add ground coriander, paprika, kosher salt, turmeric, and chili powder (or cayenne) to taste. continue stirring often until the okra develops brown spots and the vegetables appear dry, usually around 6 to 10 minutes more.
