Heat 2 teaspoons of oil in a pan and saute 1 tablespoon of cumin seeds until they turn aromatic.
Add 1-inch piece of ginger and 2 green chilies. saute for a minute.
Keeping the flame low, add 1/2 teaspoon of turmeric powder, 1 teaspoon of kashmiri red chili powder, 1/2 teaspoon of coriander powder, 3/4 teaspoon of aamchur powder, a pinch of asafoetida (hing), and salt to taste.
saute on low flame without burning the spices.
Additionally, add 2 boiled and cubed potatoes to the pan. mix gently without breaking the potatoes.
