Peel the skin off the beetroot using a peeler and grate it.
Soak the split moong dal for about 30 minutes. if desired, chop the onion.
Finely chop the green chilies. heat oil in a pan and add mustard seeds. once they start spluttering, add cumin seeds, green chilies, and curry leaves. then, add the onions, salt, and a pinch of asafoetida (hing). cook until the onions turn light brown.
Add turmeric powder, soaked moong dal, and grated beetroot to the pan. cook for some time, stirring occasionally.
Fry until the moong dal is properly cooked, adding water if necessary to prevent sticking.
