To prepare the spiced beetroot stir-fry, start by steaming the beetroot until it becomes tender.
In a pressure cooker, add the steamed beetroot, half teaspoon of salt, and 2 tablespoons of water.
Cover the cooker and cook until it gives 2 whistles.
Once the pressure is released, open the cooker and keep the beetroot aside.
In a pan, heat cooking oil, add mustard seeds, cumin seeds, urad dal, and curry leaves. cook until the lentils turn golden.
