Wash the aloe vera leaves thoroughly and remove the thorns. slit the leaves lengthwise and cut them into thin strips, similar to ribbons, to allow better absorption of flavors.
Pressure cook the aloe vera strips with a small amount of water until one whistle.
In a separate pan, heat mustard oil and add cumin seeds, mustard seeds, and broken dry red chilies. allow them to crackle.
Mix coriander powder, turmeric powder, raw mango powder, salt, and a little jaggery with a small amount of water to form a paste. add this paste to the hot mustard oil and saute until it becomes glazed, stirring continuously.
Transfer the boiled aloe vera strips to the pan with the roasted masala and toss them well to coat them evenly.
