In a small mixer jar, add 1 tablespoon of black pepper, 0.5 teaspoon of fennel seeds, 0.5 teaspoon of cumin seeds, and 0.5 teaspoon of coriander seeds.
Blend the ingredients to a coarse powder without adding any water. set aside.
Heat 2 tablespoons of ghee in a large kadai and add 1 teaspoon of mustard seeds, 2 dried red chillies, and a few curry leaves.
Also, add 1 inch of ginger and 0.5 onion. saute until the onions shrink slightly.
Add 300 grams of mushrooms and stir-fry them on high flame.
