How To Cook?

Cook the potatoes in a pan of salted boiling water for about 10 minutes until tender. drain the potatoes well and return them to the pan. lightly crush the potatoes with the back of a fork, breaking them slightly without mashing them completely.

Heat the sunflower oil in a large frying pan. add the asafoetida, black mustard seeds, cumin seeds, and dried chillies to the hot oil. cook for a few minutes until the spices start to pop and the chillies darken.

Add the green chilli, cabbage, and a pinch of salt to the pan. stir-fry for 3-4 minutes until the cabbage begins to soften. add the warm crushed potatoes to the pan and cook for an additional 2-3 minutes until the cabbage is tender but still has a slight crunch.

Stir in the juice of half a lemon, fresh coconut, and coriander. mix well and remove from heat.
