Heat oil in a kadai or frying pan and add mustard seeds, cumin seeds, finely chopped ginger, finely chopped green chilies, and curry leaves. saute for about 30 seconds.
Add peanuts to the pan and saute for another 30 seconds on medium heat. then, add grated fresh coconut and saute for a minute.
Sprinkle asafoetida, red chilli powder, turmeric powder, and coriander powder into the pan. saute until the spices become fragrant.
Add the ivy gourd (tendli) and salt to the pan. mix everything well, cover the pan, and cook for 5-7 minutes on medium heat.
Remove the lid and add chopped coriander leaves, grated fresh coconut, and lemon juice. give it a final mix.
