To prepare the potato and green beans stir-fry, start by cooking the potatoes and beans separately. you can use a pressure cooker to cook the potatoes and beans until tender.
Once the potatoes are cooked, let them cool, peel the skin, and dice them into small chunks. set aside the steamed beans and potatoes.
In a heavy-bottomed pan, heat 2 tablespoons of sunflower oil. add mustard seeds and cumin seeds, and let them crackle.
Now, add the chopped curry leaves, turmeric powder, asafoetida, coriander powder, and red chilli paste to the oil. stir for a few seconds to release the aromas of the spices.
Gently add the cooked potatoes and steamed green beans to the masala in the pan. sprinkle some salt and give it a good stir to coat the vegetables with the spices.
