In a large pan, heat 2 tablespoons of sunflower oil. add the finely chopped onion, sliced garlic cloves, and chopped ginger. saute for about 3 minutes until fragrant.
Stir in the potatoes, which have been cut into 2cm chunks, along with the halved, deseeded, and finely sliced red chilli, black mustard seeds, cumin seeds, turmeric, and salt. continue cooking and stirring for an additional 5 minutes.
Add a splash of water, cover the pan, and cook for 8-10 minutes, or until the potatoes are tender. you can check the doneness by piercing them with the point of a knife.
Once the potatoes are cooked, add the spinach leaves to the pan and let them wilt. remove from heat.
Serve the spiced potato and spinach stir-fry as a flavorful side dish or as a main course with rice or bread.
