To prepare the spinach and coconut stir-fry (harive soppu palya), start by heating a kadai with 2 tablespoons of oil over medium flame.

Add mustard seeds and allow them to splutter. then, add urad dal, a pinch of hing, dry red chilies, and curry leaves. let the curry leaves crackle.

Now, add chopped garlic and onions to the kadai. saut„© until the onions become translucent.

Add the chopped spinach leaves (harive soppu) and continue cooking the stir-fry.
