Rinse the spinach and cabbage thoroughly. if using fresh spinach, remove any tough stems and roughly chop the leaves. if using frozen spinach, thaw and drain the excess water.

Heat oil in a pan or skillet over medium heat.

Add mustard seeds and let them crackle.

Add urad dal and chana dal. saute until they turn golden brown.

Add the cabbage and saute for a few minutes until it begins to soften.
