Trim and peel the carrot. finely grate the carrot.
Grate the cabbage into thin shreds.
In a mixer jar, combine the grated coconut, onion, garlic, cumin seeds, and green chilli. grind them coarsely without adding any water. set aside.
Heat coconut oil in a kadai or pan. add the mustard seeds, curry leaves, and red chilli listed under 'to temper.' let them splutter.
Once the mustard seeds start spluttering, add the grated carrot and cabbage.
