Heat ghee in a pan and add makhana (fox nuts). roast them until they turn golden and become crisp. to check if they are crispy, break one and ensure it's crisp. set aside.

In the same pan, heat oil and add cumin seeds and green chilies. let them splutter, then add boiled potatoes along with red chili powder, roasted cumin powder, and salt. mix well and roast for a minute.

Now, add the roasted makhana to the pan and give it a toss. add mint leaves and coriander leaves, and mix well. switch off the heat.

Serve the spiced potato makhana stir-fry hot or warm.
