To make the spicy onion chutney, begin by roasting the red hot peppers on a hot griddle until they are slightly charred. set them aside.
In a blender or food processor, combine the roasted red hot peppers, roasted chana dal, garlic cloves, small onions, cumin seeds, turmeric powder, vinegar, and 1/3 cup of water. blend everything into a smooth paste.
Peel the potatoes and cut them into large chunks. boil the potato chunks in water until they become soft and tender. drain the water and set the boiled potatoes aside.
Heat oil in a pan and add mustard seeds. allow them to splutter.
Add curry leaves and saut„© for a few seconds.
