To prepare the spicy tomato peanut chutney, start by dry roasting the peanuts and red chillies in a pan until the peanuts turn light brown. once roasted, remove them from the heat and set them aside to cool.
Meanwhile, heat water in a saucepan and add the ripe tomatoes. allow them to cook for about 5 minutes until the skin starts to peel off.
Once the tomatoes are cooked, remove the skin and set them aside.
In a mixer grinder, combine the roasted peanuts, red chillies, peeled tomatoes, and garlic cloves. add a pinch of salt and grind the mixture to a smooth paste. you can add a little water to facilitate blending.
In a small pan, heat vegetable oil for tempering. add mustard seeds and let them splutter. add the split urad dal and curry leaves. saute until the dal turns golden brown.
