Garlic and tomato roasting: begin by roasting the garlic cloves, ripe local tomato, and red chillies on an open flame or in an oven. the goal is to achieve a roasted and charred texture for these ingredients.
Tamarind infusion: while the garlic, tomato, and red chillies are roasting, soak the tamarind pulp in warm water to soften it. once softened, extract the tamarind juice by pressing and straining.
Blending the roasted ingredients: once the roasted ingredients are ready, allow them to cool slightly. then, blend them together into a smooth paste, adding a bit of the tamarind juice to aid in blending.
Adjusting consistency: adjust the consistency of the chutney by adding more tamarind juice or water as needed. the chutney should have a slightly thick and spreadable texture.
Tempering: in a separate pan, heat a teaspoon of sunflower oil. add mustard seeds and let them splutter. add the curry leaves, a pinch of asafoetida, and a whole red chilli. saute this tempering mixture briefly until aromatic.
