To prepare tomato onion chutney pasta, start by cooking the pasta. in a large pot, bring water to a boil, then add the penne pasta. cook the pasta for 20-25 minutes or until it is al dente. drain the water from the pasta, but make sure to reserve some pasta water for later use.
In a mixer, combine the ripe tomatoes, onions, red chilies (if using), and garlic. blend the ingredients until you get a smooth chutney-like consistency.
Heat the extra virgin olive oil in a non-stick pan, then saut„© the tomato onion chutney for about 5 minutes until the raw smell disappears.
Once the tomato onion chutney is cooked, add the cooked penne pasta to the pan and toss it in the chutney for about 3-4 minutes, ensuring the pasta gets coated evenly.
Taste and adjust the seasoning by adding salt and black pepper according to your preference.
