To prepare the spicy lime leaves chutney, first wash the kaffir lime leaves and curry leaves. pat them dry using a clean cloth.
In a dry frying pan, roast the red chillies until they become crispy. set them aside to cool.
Remove the stems from the kaffir lime leaves.
In a blender or food processor, add the roasted red chillies, kaffir lime leaves, shallots, curry leaves, salt, tamarind pulp, and asafoetida.
Blend all the ingredients into a coarse paste. you can also make it into a fine paste if desired.
