To make the spicy ginger chutney, start by dry roasting chana dal, urad dal split, red chillies, and coriander seeds in a pan until they turn golden brown and aromatic. set them aside to cool.
In the same pan, add a tablespoon of sunflower oil and saut„© chopped ginger, onion, and tomato until they become soft and tender.
Once the roasted ingredients are cooled, transfer them to a blender along with the saut„©ed mixture.
Add salt to taste and blend all the ingredients into a smooth chutney, adding water if needed.
In a separate pan, heat a tablespoon of sunflower oil and add mustard seeds. let them crackle.
