To prepare the coconut-cashew bhindi stir-fry, start by cutting the ladies' fingers (okra) into small pieces.
Gather all the other ingredients and keep them ready.
Heat sunflower oil in a pan or kadai, and add mustard seeds, cumin seeds, chana dal, dry red chili, and garlic.
Let them fry until aromatic.
Add the cashew nuts and cook them until lightly browned. this should take about 1 to 2 minutes. be careful not to overbrown them.
