Heat sunflower oil in a pan and add the chopped ivy gourd. saut„© them until they are lightly browned and cooked.
Add red chilli powder, turmeric powder (haldi), and garam masala to the cooked ivy gourd. mix well to coat the ivy gourd with the spices.
In a separate pan, heat ghee and add finely chopped onions. saut„© until the onions turn golden brown.
Add cashew nuts, chopped tomato, grated raw mango, and chopped green chilli to the pan. cook until the tomatoes soften.
