To prepare the crispy bitter gourd stir-fry, wash the bitter gourd thoroughly, peel the skin using a peeler, and cut it into thin strips. remove any seeds if present.
In a mixing bowl, combine the thin bitter gourd strips with the peels, add 1/2 teaspoon of salt, and mix well. allow it to rest for about 20 minutes.
Heat a heavy-bottomed pan over medium heat and add mustard oil.
Once the mustard oil begins to smoke, reduce the heat and add fennel seeds. let them sizzle.
