Preparation: begin by preparing all the necessary ingredients for the spiced ivy gourd stir-fry.
Cook ivy gourd: in a pressure cooker, add the cut ivy gourd (kovakkai), salt, turmeric powder, and 2 tablespoons of water. pressure cook for 2 whistles. open the pressure cooker immediately to prevent overcooking. set aside.
Roast and grind masala: in a small pan, dry roast the split yellow lentils (moong dal) and split white lentils (urad dal) until they turn slightly brown. then, add coriander seeds, sesame seeds, cumin seeds, fenugreek seeds, and dried red chillies. roast for a minute until fragrant. allow this mixture to cool.
Blend spices: once cooled, blend the roasted spices along with roasted cashews and tamarind paste in a mixer grinder to form a coarse powder. do not add water during this process.
Saute ivy gourd: heat oil in a heavy-bottomed pan. add mustard seeds and let them crackle. then, add curry leaves and asafoetida and stir for a few seconds.
