To begin making the spicy ridge gourd stir fry, prepare all the ingredients and keep them ready.
Remove the seeds from the green chilies and set them aside.
In a pressure cooker, heat a teaspoon of oil and add carom seeds (ajwain). allow them to crackle.
Add onions, ginger, and garlic. saute until the onions become tender.
Once the onions are tender, add the tomatoes and the rest of the spices. saute for a few seconds.
