Wash the ivy gourd and green bell pepper thoroughly under running water to remove any dirt or impurities. trim the ends of the ivy gourd and cut it into thin slices. cut the green bell pepper into small pieces.
In a pan or wok, heat some oil over medium heat. add cumin seeds and mustard seeds. let them splutter and release their aroma.
Add curry leaves and green chillies to the pan. saute them briefly to infuse their flavors into the oil.
Now, add the sliced ivy gourd and chopped green bell pepper to the pan. season with turmeric powder and salt according to your taste preferences.
Stir-fry the vegetables on medium heat until they are cooked and tender. this should take about 8-10 minutes.
