To prepare the crunchy ivy gourd with sesame and peanuts, start by washing and thinly slicing the ivy gourd (tindora/kundru). set it aside.
Dry roast the sesame seeds in a kadai (wok) until fragrant, for about a minute on medium heat. keep the roasted sesame seeds aside.
Heat oil in the same kadai and add mustard seeds, dried red chilies, and curry leaves. allow the mustard seeds to crackle.
Once the mustard seeds have crackled, add the sliced ivy gourd and stir well on high heat for 2-3 minutes.
Add turmeric powder and salt to the kadai, and continue frying the ivy gourd on low heat.
