To prepare coconut chayote stir-fry, begin by peeling the chayote squash and cutting them into medium-sized dice.
Steam the diced chayote squash with a pinch of salt in a pressure cooker or a steamer. use about 2 tablespoons of water to facilitate steaming. cook until the chayote becomes soft and tender.
In a blender, create a coarse mixture by combining fresh coconut, one sprig of curry leaves, green chilies, and cumin seeds.
Mix the coconut mixture into the steamed chayote squash and set it aside.
To prepare the seasoning, heat a small pan with a teaspoon of oil. add mustard seeds and let them crackle.
