To prepare the mixed vegetable sambar with ivy gourd and brinjal, start by gathering all the ingredients.
In a pressure cooker, add arhar dal along with 2 cups of water, ensuring the dal is fully immersed. add salt and turmeric powder to the dal.
Close the pressure cooker with the lid and cook for 4 whistles.
Allow the pressure to release naturally and set the cooked dal aside.
In the meantime, in a saucepan, bring 2 cups of water to a boil. add the chopped ivy gourd, brinjal, carrot, salt, and turmeric powder.
