To prepare the bitter gourd and eggplant stir-fry, wash the bitter gourd, gently scrape its skin, and slice it into thin circles.
Remove the seeds and the white pith at the center.
Also, slice the eggplant into thin pieces and keep them immersed in salted water to prevent discoloration.
Heat oil in a heavy-bottomed pan.
