To prepare the turmeric spiced vegetable stir-fry, heat oil in a pan over medium heat.
Add grated ginger, chopped turmeric root, and green chilies to the pan. sprinkle a pinch of salt and cook until the turmeric softens, approximately 4 to 5 minutes.
In a separate bowl, mix curd, gram flour, salt, coriander powder, black pepper powder, and garam masala powder. beat the mixture well until smooth and set it aside.
Once the turmeric is cooked, slowly add the yogurt mixture to the pan while continuously stirring.
Cook the vegetable until the mixture thickens, which will take about 5 minutes.
