To prepare the lemongrass tofu and vegetable stir-fry, start by cutting all the vegetables into bite-sized pieces.
Make the lemongrass curry paste by blending lemongrass, red chilies, ginger, and garlic into a smooth paste with a little water. set it aside.
Make the tomato puree by blending tomatoes until smooth. keep it aside.
In a mixing bowl, whisk together coconut milk, tomato puree, lemongrass curry paste, turmeric powder, and garam masala (or curry powder) until well combined. adjust salt and spice levels to taste.
Add the cubed tofu into the coconut milk mixture and set it aside to marinate.
