To prepare the spiced cauliflower & beans stir-fry, start by cutting the cauliflower and french beans into appropriate sizes.
Steam the cauliflower and beans with a pinch of salt until they are just tender. be careful not to overcook them.
In a heavy-bottomed pan, heat sesame oil over medium heat. add mustard seeds and urad dal, and allow them to crackle and turn golden brown.
Stir in the curry leaves, red chilli powder, and turmeric powder. add the steamed cauliflower and beans to the pan.
Toss everything well until the spices coat the vegetables evenly.
