To start making the spiced eggplant & spinach stir-fry, slice the eggplants into long strips and place them in a bowl of salted water to prevent discoloration.
Heat oil in a heavy-bottomed pan over medium flame and add the mustard seeds and cumin seeds. allow them to crackle.
Drain the eggplants and add them to the pan. season with a little salt, mix well, and let the eggplants cook in their own water until they are halfway cooked. this should take about 5 minutes.
Now, add the spinach leaves and saut„© for a minute.
Cover the pan and let the eggplants and spinach cook thoroughly.
