To begin making the turmeric spiced vegetable stir fry, heat oil in a heavy-bottomed pan over medium heat.
Add mustard seeds and allow them to crackle.
Once the mustard seeds crackle, add asafoetida, green chilies, and curry leaves. saute for a few seconds.
Sprinkle turmeric powder over the saute ingredients.
Add the chopped vegetables (carrots, cabbage, and capsicum), salt, and stir well to combine all the ingredients.
