Cook the brown rice in a pressure cooker until it is fully cooked. this usually takes around 12-15 minutes. once cooked, drain if needed and set aside.
Heat oil in a large pan or kadhai over medium heat. add the mustard seeds, urad dal, chana dal, and dried red chilies. saute for about a minute until the dals turn lightly brown.
Add the onions to the pan and cook for 3-4 minutes until they become translucent. then, add the raw mango and cook for another minute or two until it starts to soften slightly.
Mix in the red chili powder, turmeric powder, salt, and curry leaves. stir well to combine the spices with the ingredients in the pan.
Add the cooked brown rice to the pan and toss everything together, ensuring the rice is well coated with the flavors. cover the pan and let it cook on low heat for 3-5 minutes to allow the flavors to meld together.
