Peel and coarsely mash the boiled potatoes. do not make a paste.
Heat 2 tablespoons of oil in a nonstick frying pan or a heavy-bottomed stainless steel pan over medium-high heat. add chopped onions and minced garlic. saute for 5 to 6 minutes or until they become light brown.
Add mashed potatoes, crumbled paneer, chopped green chilies, and grated ginger to the pan. mix well with the fried onions.
Sprinkle salt, coriander powder, red chili powder, and mango powder. mix well with the potatoes and onions, and fry for 5 to 6 minutes. flip the potatoes upside down a few times to ensure even frying. add a little oil if needed.
Once the potatoes are fried, sprinkle chopped coriander leaves and mix. turn off the stove and let the potatoes cool down.
