In a mixing bowl, combine the sliced okra, chickpea flour, salt, red chilli powder, chaat masala, and water. mix well to coat the okra evenly with the flour mixture.

Heat oil in a deep frying pan or kadai over medium heat. fry the coated okra in batches until they turn crispy and golden brown. drain them on a kitchen paper towel to remove excess oil.

In a separate pan, heat oil and add mustard seeds. allow them to crackle, then add cumin seeds and asafoetida. stir briefly.

Add ginger garlic paste, green chillies, and sliced onions. saute until the onions turn soft and translucent.
