To begin making the assamese tangy tomato chutney, heat a kadai or pan with mustard oil.
Once the oil starts to smoke, add the panch phoran, bay leaves, and dried red chilli for tempering.
Next, add the chopped tomatoes to the pan.
Sprinkle turmeric powder, red chilli powder, salt, and sugar over the tomatoes. mix everything well.
Cook the tomatoes over low to medium flame, covered, for about 5-7 minutes, stirring occasionally.
