To prepare the tangy green tomato chutney, heat oil in a pan.

Add fenugreek seeds and let them turn red.

Now, add garlic, chopped green tomatoes, and saute until the tomatoes release their juices and soften.

Allow the mixture to cool down.

Transfer the cooled tomatoes, along with salt and jaggery (if using), to a blender and blend into a coarse paste.
