To prepare the tangy tomato chutney, begin by heating oil in a pan.
Add fenugreek seeds and cook until they turn golden. let them cool down.
Meanwhile, in a mixer grinder, add the raw tomatoes, green chillies, garlic cloves, salt, and jaggery. grind them into a smooth paste.
Now, heat oil in the same pan again and add mustard seeds. let them cook for about 10 seconds until they start to crackle.
Add the curry leaves and cook for another 10 seconds to infuse their flavors.
