In a bowl, soak the sabudana (tapioca pearls) with 1 cup of water for 30 minutes. then, drain the soaked sabudana and transfer it to a mixing bowl.
Boil the potatoes until they are tender. once boiled, peel and mash them. add the mashed potatoes to the mixing bowl with the drained sabudana.
Roughly crush the peanuts and add them to the mixing bowl along with gram flour (besan).
Grate the ginger and finely chop the green chilies. add them to the mixing bowl along with cumin powder, coriander powder, red chili powder, garam masala powder, finely chopped coriander leaves, and salt.
Mix all the ingredients well using a spoon or your fingers until well combined.
