In a preheated pressure cooker, add ghee, dried red chillies, carom seeds, fennel seeds, cardamom pods, black peppercorns, cloves, cinnamon, garlic cloves, and ginger. saute for a few seconds.
Add the boneless mutton pieces to the pressure cooker and saute until they are seared and browned for about 5 minutes.
Add chana dal, turmeric powder, salt to taste, and enough water to completely immerse the ingredients. pressure cook the mutton and dal for 5 to 6 whistles.
Reduce the heat to low and simmer for an additional 3 to 4 minutes. allow the pressure to release naturally and then open the pressure cooker.
If there is any excess moisture in the pressure cooker, turn on the heat and stir until the moisture evaporates.
