Boil the large potatoes in salted water until cooked. once boiled, peel the skin off the potatoes and set them aside.
Heat a heavy-bottomed saucepan over medium heat and add vegetable oil. once the oil is hot, add the potatoes to the pan along with a sprinkle of turmeric powder. fry the potatoes for a few minutes until they turn slightly golden. remove the potatoes from the pan and set them aside.
In the same pan, add the indian five spice (paanch phoron), cinnamon stick, bay leaves, and sugar. allow the spices to sizzle and the sugar to caramelize for a couple of seconds. then, add the sliced onion, grated ginger, and sprinkle some salt. stir and cook for 5 minutes until the onion becomes translucent.
If using tomato paste, add it to the pan and cook for 3 minutes. if using fresh tomatoes, dice them and add them to the pan instead. stir and cook for 3 minutes.
In a small bowl, mix together turmeric powder, coriander powder, cumin powder, and chili powder with 2 tablespoons of water to form a paste. pour the spice paste into the pan and stir well. cook for about 5 minutes or until you see the oil being released from the edges of the pan.
