To prepare the andhra style sabudana punugulu, start by soaking the sabudana (tapioca pearls) in water for 2 hours. then, boil them in a saucepan with additional water for about 10 minutes until they become soft. drain any excess water and set aside.
In a mixing bowl, combine the boiled sabudana, greek yogurt, rice flour, cumin seeds, red chilli powder, curry leaves, green chillies, chopped onion, and salt. mix well to form a thick batter. adjust the salt according to your taste.
Heat a kuzhi paniyaram pan (or any other round-bottomed pan) and add a teaspoon of oil into each cavity.
Spoon the batter into each cavity of the pan and fry the fritters on medium heat until they turn brown and crisp on the bottom side.
If desired, you can add a little more oil on top of each fritter to enhance the crispiness.
