Heat vegetable oil in a pan. add finely chopped onions, curry leaves, green chili, and a pinch of salt. saute for a minute until the onions turn translucent.
Add ginger-garlic paste, red chili powder, coriander powder, and garam masala to the pan. toss well to coat the onions and spices.
Transfer the onion-spice mixture to a bowl of mashed potatoes. mix well to combine all the ingredients. divide the mixture into equal portions and shape them into balls.
In a bowl, make a paste by combining cornflour with water.
Take one potato ball, roll it in all-purpose flour, dip it in the cornflour paste, and then roll it in breadcrumbs to coat evenly. repeat this process for all the potato balls. place the coated balls in the refrigerator for 15 minutes to firm up.
