To prepare the spiced potato paneer curry, blend the tomatoes, ginger, and green chillies in a blender to make a coarse puree. set it aside.
Heat sunflower oil in a pressure cooker and add grated ginger. saute for about a minute until it releases its fragrance.
Add the tomato-ginger-chilli puree to the cooker and saute for approximately 10 minutes until most of the water has evaporated.
Stir in the red chilli powder, coriander powder, and salt. saute for another 5 minutes until the water has completely evaporated.
Add the potatoes to the cooker and saute for 2 minutes.
