Start by washing the spinach leaves thoroughly and chopping them coarsely. set them aside.
In a wok or kadhai, heat 2 tablespoons of sunflower oil. fry the boiled egg until it turns golden and crispy. once done, transfer the fried egg to a separate bowl.
Remove the excess oil from the wok, leaving about 3 to 4 tablespoons.
Add broken red chili, finely chopped green chili, and a pinch of asafoetida to the hot oil. saute for a few seconds.
Now, add the chopped spinach leaves and salt to the wok. cover the lid and let it cook for a few minutes.
