To prepare the sweet and tangy pumpkin sabzi, start by peeling the pumpkin and removing the seeds. cut it into approximately 3/4-inch cubes.
Chop the green chillies and set aside.
Heat a kadai or skillet over medium heat.
Dry roast the fennel seeds and black peppercorns in the kadai until fragrant. transfer them to a bowl and let them cool.
In the same kadai, heat oil over medium heat. add the pumpkin cubes and stir in salt. cook the pumpkin for a few minutes until it begins to soften.
